Brownie Biscuits
Ingredients
Brownie
- 40g unsalted butter, chopped
- 250g dark chocolate, chopped
- 2 eggs, lightly whisked
- 225g (1 cup) white sugar
- 30g (1/4 cup) plain flour
- 30g (1/4 cup) Dutch cocoa powder
- 1 tsp vanilla extract
- Pinch of salt
- 1/2 tsp baking powder
Filling
- 250g cream cheese, room temperature
- 1/3 cup caster sugar
- 20g butter, room temperature
- 2 drops mint essence
- Green food colouring

Preheat oven to 180C/160C fan forced. Grease 2 baking trays and line with baking paper.

Place butter and chocolate in a heatproof bowl over a saucepan of simmering water (don't let the bowl touch the water). Stir with a metal spoon until melted. Remove from heat. Quickly stir in egg, sugar, flour, cocoa powder, baking powder, vanilla and salt until just combined.

Drop tablespoonfuls of mixture onto trays. Bake for 12-15 minutes or until just set. Cool on trays.

Beat cream cheese, 1/3 cup caster sugar, 20g room temperature butter and 2 drops mint essence and green food colouring in a bowl. Pipe onto biscuits and sandwich together.
