Ingredients
For the chicken
- 2 skinless chicken breasts
- 1 tbsp Cajun spice mix
- 1 tbsp olive oil
For the San Fran quinoa salad
- 200g quinoa
- 1 red onion, finely chopped
- 1 red pepper, finely chopped
- 1 yellow pepper, finely chopped
- 100g frozen peas
- 100g sweetcorn
- 1 avocado, diced
- 2 tbsp chopped coriander
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 red chilli, finely chopped (optional)

Lay the chicken breasts flat and bash them out to about 1cm thick.

Rub the Cajun spice mix all over the chicken.

Heat the olive oil in a large frying pan over a high heat.

Fry the chicken for 3-4 minutes on each side, until cooked through and blackened.

Meanwhile, cook the quinoa according to packet instructions.

While the quinoa is cooking, prepare the salad by mixing the red onion, peppers, peas, sweetcorn, avocado, coriander, lime juice, olive oil and chilli (if using).

Serve the blackened chicken with the San Fran quinoa salad.
