Barbecued Prawns with Picada Dressing
Ingredients
- 24 (about 1kg) large green king prawns
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 tbsp olive oil
- 80mls (1/3 cup) extra virgin olive oil
- 1/3 cup chopped fresh continental parsley
- 3 garlic cloves, crushed
- 1/2 tsp salt
- 1/2 tsp ground black pepper

Place the whole unpeeled prawns in a large bowl and sprinkle with the salt and pepper. Toss to combine. Cover and place in the fridge for 30 minutes to marinate.

To make the picada dressing, combine the olive oil, parsley, garlic, salt and pepper in a small jug and mix well.

Add the olive oil to the prawns and toss to combine.

Heat a barbecue hotplate or grill on high. Add the prawns and cook for 1-2 minutes each side or until the prawns just turn pink. Serve immediately with the picada dressing.
