5-Ingredient Peanut Butter S'mores Bites
Ingredients
Crust
- 1 cup finely crushed vanilla wafers
- 1/4 cup confectioners sugar
- 5 tablespoons unsalted butter, melted
Filling & Topping
- 24 mini chocolate peanut butter cups
- 12 large marshmallows, cut in half

Preheat the oven to 350 degrees F (180 degrees C). Line a 24-cup mini muffin pan with mini cupcake liners.

Combine vanilla wafer crumbs, confectioner's sugar, and butter in a small bowl. Place about 1 teaspoon of the crumb mixture into each muffin cup, pressing down with your fingers to flatten the top.

Bake in the preheated oven for about 5 minutes. Remove from oven, place a mini peanut butter cup into each muffin cup, and top with a half marshmallow, cut side down.

Return muffin pan to the oven, and bake until the marshmallow is slightly softened, about 2 minutes. Turn on the broiler, and place the muffin tin under the broiler for about 30 seconds to brown the tops. Keep your eye on them; they will brown quickly.

Allow to cool for at least 1 hour (or longer) to firm up. This will prevent them sticking to the paper. Remove from the pan, and enjoy.
