Warm Goat's Cheese Pots
Ingredients
- Melted butter, for greasing
- 300g goat's cheese
- 3 eggs, separated
- 185mls (3/4 cup) thin cream
- 1/4 bunch fresh chives, finely chopped
- Salt & ground black pepper, to taste
- Mixed green salad leaves, to serve
- Olive oil, to serve
- Balsamic vinegar, to serve

Preheat oven to 180°C. Brush six 125mls (1/2-cup) ramekins with the melted butter to lightly grease.

Beat goat's cheese, egg yolks and thin cream in a bowl with electric beaters until well combined.

Whisk the egg whites in a separate mixing bowl with dry, clean electric beaters until soft peaks form. Fold the egg whites and chives into the cheese mixture with a metal spoon until combined. Season with salt and pepper.

Spoon the mixture into the greased ramekins and smooth the tops. Place the ramekins into a baking dish and pour enough hot water into the dish to reach half-way up the sides of the ramekins. Bake in the preheated oven for 20 minutes or until just set and golden on top. Remove the ramekins from the baking dish and stand for 10-15 minutes to cool slightly.

Serve the goat's cheese pots warm with mixed green salad leaves, dressed with a little olive oil and balsamic vinegar.
