Vietnamese Lemongrass Pork Steaks (tenderised!)

Ingredients
- 500g/1 lb pork shoulder
- 3 tbsp canola oil
- 2 lemongrass stalks
- 4 garlic cloves
- 4 tbsp lime juice
- 3 tbsp fish sauce
- 1 tbsp soy sauce
- 4 tbsp brown sugar
- 3 tbsp oil
- 3/4 tsp baking soda/bi-carb

Cut pork into 8 equal, thinnish slices. Pound each steak to 5mm / 0.2" thickness using a meat mallet or rolling pin. Mix marinade ingredients in a bowl, add pork, and coat well. Marinate for 24 hours. Remove pork from marinade and brush off lemongrass pieces. Cook pork for 1 1/2 minutes on one side and 1 minute on the other side in a hot cast iron skillet or on the BBQ over high heat. Serve with Vietnamese noodle bowls or rice and a side salad.
