Turon (Filipino Fried Banana Rolls)
Ingredients
For the Filling
- 4 medium ripe but firm bananas, such as Cavendish or saba, peeled and halved lengthwise
- 1/4 cup jackfruit, cut into 1/4-inch strips (optional)
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
For the Wrappers
- 8 spring roll wrappers (about 8 1/2 x 8 1/2 inches)
- 2 tablespoons vegetable oil, for frying

In a medium bowl, combine the bananas, jackfruit (if using), brown sugar, and cinnamon. Mix gently to coat.

Place one spring roll wrapper on a clean, dry surface. Place about 2 tablespoons of the banana mixture in a log shape near the bottom edge of the wrapper.

Fold the bottom edge of the wrapper over the filling, then fold in the sides. Roll tightly to form a spring roll.

Repeat with the remaining wrappers and filling.

Heat the vegetable oil in a large skillet over medium heat. Add the turon in a single layer, being careful not to overcrowd the pan.

Fry for 2-3 minutes per side, or until golden brown and crispy.

Remove the turon from the skillet and place on a wire rack lined with paper towels to drain.
