Spicy Sausages with Polenta
Ingredients
- 8 low-fat chilli beef sausages
- 375.00 gm water
- 510.00 gm Chicken stock
- 150.00 gm instant polenta (see Notes)
- 82.50 ml finely grated parmesan cheese
- 8 Roma tomatoes, halved lengthways
- 2 tsp balsamic vinegar

Heat a large frying pan over medium heat. Add sausages. Cook, turning occasionally, for 10 to 12 minutes or until cooked through.

Meanwhile, bring water and stock to the boil in a saucepan. Reduce heat to medium-low. Add polenta and stir constantly for 5 minutes or until all liquid is absorbed and polenta is soft. Stir in parmesan.

Set sausages aside and keep warm. Add tomatoes to frying pan, cut-side down. Cook over medium heat for 2 minutes. Turn and drizzle cut side with balsamic vinegar. Cook a further 2 minutes. Turn again and cook for 1 minute.

Serve sausages with tomatoes and polenta.
