Spiced Zucchini & Walnut Scones

Ingredients
Scone Dough
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground coriander
- 1/4 tsp sea salt
- 1/2 cup (1 stick) cold butter, cut into cubes
- 1 large egg
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 cup grated zucchini (squeeze out water)
Glaze
- 1/2 cup powdered sugar
- 1-2 tbsp milk
- 1/4 tsp vanilla extract
Add-ins
- 1/2 cup chopped walnuts

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, coriander, and salt.

Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.

In a separate bowl, whisk together egg, milk, and vanilla extract.

Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.

Gently fold in the grated zucchini and walnuts.

Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick circle. Use a 2-inch biscuit cutter to cut out scones. Place scones onto the prepared baking sheet.

Bake for 15-20 minutes, or until golden brown.

In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Add more milk, 1 teaspoon at a time, until desired consistency is reached.
