Spiced Toasted Muesli

Ingredients
- 150 grams rolled oats
- 150 grams wholegrain oats
- 90 grams threaded coconut
- 140 grams slivered almonds
- 70 grams macadamia nuts, halved
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- freshly grated zest 1 orange
- 30 grams butter
- 80ml runny honey
- 1 large egg white
- 250 grams dried fruit, such as golden or jumbo raisins, currants or apricots
- 50 grams crystallised ginger, finely chopped

Preheat the oven to 150°C regular bake.

In a large bowl, combine the oats, coconut, nuts, spices and the orange zest. In a small saucepan, melt the butter and honey. Add to the muesli along with the egg white and stir through.

Pour the muesli onto the trays and bake for 12-15 minutes, stirring half way through.

Remove from the oven and set aside to cool.

Once cool, tip into a large bowl and mix through the dried fruit and ginger.

Store in an airtight container.
