Smoked Trout Pate
Ingredients
- 400g smoked trout fillet
- 280g unsalted butter, softened
- 40.00 ml horseradish cream
- 2 tbsp horseradish cream
- Pinch of cayenne pepper
- 100ml (5 tbsp) creme fraiche or sour cream
- 40ml (2 tbsp) lemon juice, plus extra to serve
- 40.00 ml chopped fresh dill
- 2 tbsp chopped fresh dill

Place all ingredients in a food processor and process until combined, then season with salt and pepper. Place in a bowl, cover and refrigerate for 30 minutes. Spread on toasted bread and drizzle over extra lemon juice.
