Sea Salted Chocolate Peanut Brittle
Ingredients
Brittle
- 1 1/2 cups sugar
- 1/2 cup water
- 3/4 cup light corn syrup
- 2 1/4 cups salted roasted peanuts
- 1 tablespoon unsalted butter
- 3/4 teaspoon salt
- 1 1/2 teaspoons baking soda
- 1 teaspoon pure vanilla extract
Chocolate Coating
- 12 ounces chocolate
- 1 tablespoon flaky sea salt, for finishing

Line a baking sheet with parchment paper.

In a heavy-bottomed saucepan, combine the sugar, water, and corn syrup. Cook over medium heat, stirring until the sugar dissolves.

Continue to cook, without stirring, until the mixture reaches 300°F (149°C) on a candy thermometer (hard-crack stage).

Remove from heat and quickly stir in the peanuts, butter, and salt.

Stir in the baking soda and vanilla extract. The mixture will foam up.

Pour the mixture onto the prepared baking sheet and spread into a thin, even layer.

Let cool completely.

Melt the chocolate according to package directions.

Spread the melted chocolate over the cooled peanut brittle.

Sprinkle with flaky sea salt.
