Sausage gnocchi
Ingredients
For the sausage gnocchi
- 2 tbsp olive oil of good quality
- 1 red onion, finely chopped
- 2 cloves of garlic, finely chopped
- 400g good quality pork sausages, meat removed from skins
- 1 tbsp tomato purée
- 400g cherry tomatoes
- 1 red chilli, finely chopped (optional)
- 500g ready-made gnocchi
- 100g Parmesan cheese, finely grated
- A small bunch of fresh basil, leaves picked
For the warm kale & bean salad
- 1 tbsp olive oil of good quality
- 1 bunch of kale, core removed and torn into bite-sized pieces
- 2 cloves of garlic, finely chopped
- 1 can (400g) mixed beans, drained and rinsed
- 1 tbsp red wine vinegar
Instructions

To make the sausage gnocchi, heat the olive oil in a large frying pan over a medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.

Add the sausage meat and cook, breaking it up with a spoon, until browned all over.

Stir in the tomato purée and cook for 1 minute, then add the cherry tomatoes and chilli (if using). Cook for 10 minutes, or until the tomatoes have burst and the sauce has thickened.

Meanwhile, cook the gnocchi according to the packet instructions. Drain well and add to the sauce.

Stir in the Parmesan cheese and basil, then season to taste.

To make the warm kale & bean salad, heat the olive oil in a separate frying pan over a medium heat. Add the kale and garlic, and cook until the kale has wilted, about 5 minutes.

Add the beans and red wine vinegar, and cook for a further 2 minutes. Season to taste.

Serve the sausage gnocchi with the warm kale & bean salad.
