Roasted Rainbow Carrots with Pea Hummus
Ingredients
- 1 bunch baby carrots
- 3/4 cup cooked frozen peas
- 1/2 cup hummus
- 3 tbs olive oil
- 1 tbs dukkah, to serve
- fresh mint leaves, to serve

Preheat oven to 200°C/180°C fan forced. Line a baking tray with baking paper.

Trim and scrub the baby carrots. Arrange on prepared tray. Drizzle with 1 tbs olive oil. Turn to coat. Roast for 25 minutes or until caramelised. Cool slightly.

Combine cooked frozen peas and hummus in a small food processor. Process until almost smooth. Season.

Spread hummus onto a serving plate. Top with carrots. Drizzle with 2 tbs olive oil. Sprinkle with dukkah and fresh mint leaves. Serve.
