Roasted cod with pancetta & pea mash
Ingredients
For the cod
- 2 cod fillets, skin on or off
- 2 tbsp olive oil
- Sea salt and black pepper
For the pea mash
- 500g frozen peas
- 50g butter
- ,
- 50ml whole milk
- A few sprigs of fresh mint, leaves picked
For the pancetta
- 6 slices of pancetta
Instructions

Preheat the oven to 200°C/180°C fan/gas mark 6.

Season the cod fillets with salt and pepper, then drizzle with olive oil.

Fry the pancetta in a dry pan until crispy. Remove and drain on kitchen paper.

Place the cod fillets in a roasting tray and top with the crispy pancetta.

Roast for 12–15 minutes, or until the cod is cooked through.

Meanwhile, cook the peas in a pan of boiling water for 3–4 minutes, until tender.

Drain the peas, then mash with the butter, milk and mint until smooth.

Serve the cod on a bed of pea mash.
