Roast Pork with Apples

- 800g round pork Heart Smart roast
- 1 kg jap or butternut pumpkin, unpeeled, deseeded, cut into chunks
- 1 red onion, peeled leaving the base intact, cut into thick wedges
- Olive oil spray
- Salt & freshly ground pepper
- 2 fuji apples, halved, cored, cut into thick wedges
- 1 bunch fresh bay leaves, broken into small sprigs
- Steamed broccolini or spinach, to serve

Preheat oven to 210°C. Place the pork, pumpkin and onion in a roasting pan. Spray with oil and season with salt and pepper. Roast for 40 minutes.

Add the apple and bay leaves, and bake for a further 30 minutes or until the vegetables are tender and golden and the pork juices run clear when pierced.

Rest the pork for 5 minutes before slicing. Serve with the vegetables, bay leaves and steamed greens, and drizzle with any pan juices.
