Posh roast pork party kebabs
Ingredients
For the pork
- 1kg pork loin fillet, all fat removed
- 1 tbsp fennel seeds
- 1 tbsp coriander seeds
- 1 tbsp smoked paprika
- 1 tsp chilli flakes
- 2 tbsp olive oil
- 1 lemon, zest only
For the marinade
- 4 cloves garlic
- 1 inch ginger, peeled and roughly chopped
- 2 red chillies
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice wine vinegar
- 1 tbsp sesame oil
For the salad
- 1 cucumber
- 200g cherry tomatoes
- 1 red onion
- 1 bunch spring onions
- 1 bunch coriander
- 1 lime, juice only
To serve
- 10 flour tortillas
- Lime wedges

Bash the pork loin fillet with a rolling pin until it's about 2cm thick.

Toast the fennel and coriander seeds in a dry pan for 2-3 minutes, then grind to a powder using a pestle and mortar. Mix with the smoked paprika and chilli flakes.

Rub the pork with the spice mix, olive oil and lemon zest. Marinate for at least 30 minutes, or up to 24 hours in the fridge.

For the marinade, blitz all the ingredients in a food processor until smooth.

Cut the pork into 2cm cubes and toss in the marinade. Leave for at least 30 minutes.

Meanwhile, roughly chop the cucumber, halve the cherry tomatoes, thinly slice the red onion and finely chop the spring onions and coriander. Mix together with the lime juice.

Thread the pork onto skewers.

Grill or fry the skewers for 8-10 minutes, turning occasionally, until cooked through.

Warm the tortillas, then fill with the pork skewers and salad. Serve with lime wedges.
