Pork Stir Fry Recipe

Ingredients
For the Sauce
- ¼ cup low-sodium soy sauce (see note)
- ½ cup low-sodium chicken broth
- 2 tablespoons minced onion
- 1 tablespoon cornstarch
- 1 tablespoon chili garlic sauce (or sriracha)
- 3 tablespoons brown sugar
- 3 cloves garlic (minced)
- 1 (1-inch piece) ginger (minced)
- 1 teaspoon sesame oil
For the Stir Fry
- 1 tablespoon vegetable oil
- 1 pound pork tenderloin (thinly sliced)
- Kosher salt and freshly ground black pepper (to taste)
- 2 carrots (sliced into coins)
- 1 bell pepper (any color, chopped)
- 4 cups broccoli florets
For Serving
- 3 cups cooked white rice
- ¼ cup chopped peanuts
- Chopped green onion
Instructions

Whisk together the sauce ingredients in a bowl or shake in a jar. Set aside.

Heat the oil in a large skillet over medium heat.

Once heated, add in the pork. Sprinkle with salt and pepper and cook until browned.

Remove from the skillet to rest on a plate.

Add in the carrots and sauté for a couple of minutes.

Add in the bell peppers and broccoli and sauté for 3-4 minutes, until slightly soft but still crisp.

Stir in the pork.

Pour in the sauce and let it sizzle while giving everything a good stir. Cook for a few more minutes.

Serve with rice and top with chopped peanuts and chopped green onion.
