Pork Belly San Choy Bau
Ingredients
- 1 tbsp vegetable oil
- 600g pork belly rashers, cut into 1cm pieces
- 1 carrot, coarsely grated
- 150g Asian-style mushrooms, chopped
- 2 garlic cloves, crushed
- 250g packet 90-second long grain white rice
- 1/4 cup hoisin sauce
- 2 tbsp oyster sauce
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 1/2 cups bean sprouts
- 3 green onions, thinly sliced
- 8 large iceberg lettuce leaves

Heat vegetable oil in a large frying pan over high heat. Cook pork for 5 to 7 minutes or until golden and rind is crisp.

Add carrot, mushrooms and garlic. Cook, stirring, for 2 to 3 minutes or until tender. Add rice, sauces and sesame oil. Cook, stirring, for 3 to 4 minutes or until combined and warmed through. Stir in 1 cup sprouts and two-thirds of the onions.

Place lettuce leaves on serving plates. Spoon pork mixture into leaves. Scatter with remaining sprouts and onion. Serve.
