Paw Paw Scallop Salad
Ingredients
- 2 tbsp olive oil
- 12 scallops (without roe)
- Salt & freshly ground pepper
- 3cm piece fresh ginger, peeled, finely grated
- 1 tbsp lime juice
- 100g snowpea sprouts, trimmed
- 1 cup fresh mint leaves, torn
- 600g paw paw, deseeded, cut into small wedges

Heat 2 teaspoons of the oil in a medium non-stick frying pan over a high heat. Season both sides of the scallops with salt and pepper. Cook the scallops for 1-2 minutes each side or until they are just cooked through. Remove from the pan.

Combine the ginger, lime juice and the remaining oil in a small jug. Season mixture with salt and pepper.

Toss the snowpea sprouts and mint together. Divide among serving plates. Top with the scallops and paw paw. Drizzle over the dressing and serve dish immediately.
