Nutmeg Custard
Ingredients
- 6 eggs
- 3/4 cup (165g) caster sugar
- 1.125L (4 1/2 cups) milk
- 1 tsp vanilla extract
- Freshly grated nutmeg, to sprinkle
- Poached fruit (or fresh fruit such as rhubarb and blueberry compote), to serve

Preheat the oven to 160°C.

Whisk together eggs, sugar and milk. Stir in vanilla, then strain into a 2-litre ceramic dish. Place dish in a roasting pan and add enough boiling water to come halfway up the sides of the dish. Sprinkle with freshly grated nutmeg and bake for 30 minutes (the custard should be set but still have a slight wobble).

Cool slightly, then serve warm with fruit compote and spiced turtle doves.
