Moist Banana Bread With Coconut Oil

- 4 ripe bananas, peeled
- 1/3 cup coconut oil
- 3/4 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup dark chocolate chips, optional

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan with cooking spray.

In a large bowl, mash the bananas.

Add the coconut oil and sugar to the mashed bananas and mix well.

Beat in the eggs one at a time, then stir in the vanilla.

In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
