Mini Almond & Cherry Florentines
Ingredients
Base
- 1 cup flaked almonds
- 1/2 cup dried cherries, roughly chopped
- 1/4 cup plain flour
- 40g butter
- 2 tbsp brown sugar
- 2 tbsp golden syrup
Topping
- 150g good-quality dark chocolate, chopped

Preheat oven to 180°C. Line 2 baking trays with baking paper. Combine almonds, cherries and flour in a large bowl.

Place butter, sugar and golden syrup in a saucepan. Stir over medium heat until sugar dissolves. Add butter mixture to almond mixture. Stir to combine.

Place level teaspoons of mixture 5cm apart on prepared trays. Using a small spatula, flatten into 3cm discs. Bake for 8 to 10 minutes or until dark golden. Cool on trays.

Place chocolate in a heatproof, microwave-safe bowl. Microwave, uncovered, on high (100%) for 1 to 2 minutes, stirring every 30 seconds with a metal spoon, or until melted and smooth. Set aside for 4 to 5 minutes or until chocolate cools and thickens slightly.

Using a spatula, spread chocolate over base of florentines. Place, chocolate side up, on a wire rack. Stand until chocolate has set. Serve.
