Easy Spaghetti Bolognese Bake

- 375g Coles Simply Spaghetti dried pasta
- 1 tbsp vegetable oil
- 1 brown onion, coarsely chopped
- 1 celery stalk, trimmed, finely chopped
- 1 carrot, peeled, coarsely grated
- 150g cup mushrooms, finely chopped
- 2 garlic cloves, crushed
- 500g pkt Coles Regular Pork & Beef Bolognese Mince
- 510g jar Coles Simply Tomato & Basil Pasta Sauce
- ½ x 450g pkt Coles Simply Garlic Bread Twin Pack
- 105g (1 1/4 cups) coarsely grated cheddar

Cook the spaghetti in a saucepan of salted boiling water following packet directions or until al dente.

Meanwhile, heat the oil in a large frying pan over medium-high heat. Add the onion, celery and carrot. Cook, stirring occasionally, for 8 minutes or until vegetables start to soften. Add mushroom and garlic. Cook, stirring, for 1 minute or until aromatic.

Add the bolognese mince to the pan. Cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Stir in pasta sauce and season. Reduce heat to low. Simmer, stirring occasionally, for 10 minutes or until sauce thickens.

Add spaghetti to the bolognese mixture and toss to combine. Transfer to a 22 x 29cm roasting pan. Break up garlic bread into a food processor. Pulse until coarse crumbs. Sprinkle over pasta mixture. Top with cheese. Bake for 20 minutes or until golden. Serve.
