- 500g chicken breast fillet, thinly sliced
- 100g button mushrooms, sliced
- 2 shortcut bacon rashers, chopped
- 3 green onions, sliced
- 2 garlic cloves, crushed
- 2 tsp wholegrain mustard
- 1/3 cup dry white wine (optional)
- 1/2 cup Chicken stock
- 1/2 cup pure cream
- 2 cups Roasted pumpkin (see related recipe)
- 1/4 cup chopped fresh flat-leaf parsley
- 60g baby spinach
