Classic Southern Spoon Bread Recipe

- 3/4 cup cornmeal (stone or water ground, if possible)
- 1 teaspoon salt
- 1 cup boiling water
- 3 tablespoons melted unsalted butter
- 1 cup milk
- 2 large eggs
- 2 teaspoons baking powder
- Butter, for serving

Preheat oven to 400 degrees F (200 degrees C). Grease a 1 1/2-quart baking dish with butter.

In a medium bowl, combine the cornmeal and salt. Pour in the boiling water and stir well to combine. Add the melted butter and milk, and stir until smooth.

Separate the eggs. Beat the egg yolks into the cornmeal mixture. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cornmeal mixture.

Pour the mixture into the prepared baking dish and bake for 20 to 25 minutes, or until golden brown and puffed.
