- 160ml (2/3 cup) pouring cream
For the chicken
- 150g (2 cups) panko breadcrumbs (see note)
- 1 lemon, zested
- 1/4 cup flat-leaf parsley, finely chopped
- 150g (1 cup) plain flour
- 4 eggs, lightly beaten
- 4 x 180g chicken breasts, halved lengthways
- Olive oil, to shallow-fry
- Mutti Polpa Finely Chopped Tomatoes 400g
- 100g mozzarella, grated
