Cherry clafoutis
Ingredients
For the clafoutis
- ½ tablespoon unsalted butter, plus extra for greasing
- 200g cherries, stalks removed
- 3 large eggs
- 100g caster sugar
- 1 vanilla pod, seeds scraped
- 150ml double cream
- 100ml full-fat milk
- 50g plain flour
- Pinch of sea salt
- Icing sugar, for dusting

Preheat the oven to 180°C/gas mark 4.

Grease a 20cm baking dish with butter.

Scatter the cherries into the dish.

In a jug, whisk the eggs, sugar and vanilla seeds together.

Pour in the cream and milk, then whisk in the flour and salt until smooth.

Pour the mixture over the cherries.

Bake for 45-50 minutes, or until golden and set.
