Basic Bolognaise Sauce
Ingredients
- 2 tbsp olive oil
- 1 large brown onion, finely chopped
- 2 garlic cloves, crushed
- 750g veal mince
- 1/2 cup dry white wine
- 1/3 cup tomato paste
- 2 x 425g cans Rosa whole peeled tomatoes, chopped
- 2 tsp white sugar

Heat oil in a large heavy-based saucepan over medium heat. Add onion and garlic. Cook, stirring often, for 5 minutes or until soft. Add mince. Cook, stirring mince with a wooden spoon, for 5 minutes or until browned. Add wine and tomato paste. Cook for 1 minute. Stir in tomatoes and sugar. Bring to boil. Reduce heat to medium-low. Simmer, uncovered, for 40 to 45 minutes or until thick. Season with salt and pepper.
