Banana tarte Tatin
Ingredients
For the tarte Tatin
- 150g unsalted butter
- 150g golden caster sugar
- 6 ripe but firm bananas
- 1 orange, zest and juice
- 1 cinnamon stick
- 320g ready-made puff pastry
Instructions

Heat the butter and sugar in a 23cm ovenproof frying pan over medium heat until the sugar has dissolved and the mixture is bubbling and golden.

Arrange the bananas neatly in the pan, then pour over the orange juice and add the cinnamon stick.

Cook for 5-7 minutes, until the bananas are golden and softened.

Remove the cinnamon stick.

Roll out the puff pastry slightly larger than the frying pan.

Place the pastry over the bananas, tucking the edges down the sides of the pan.

Cook over medium heat for 5-7 minutes, until the pastry is golden and crisp.

Carefully place a serving plate over the frying pan and quickly flip the tarte Tatin onto the plate.

Serve immediately with crème fraîche, if desired.
