Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg (optional)
- 3 bananas ripe and mashed
- ⅔ cup granulated sugar
- ¼ cup brown sugar packed
- 1 egg
- 1 teaspoon vanilla extract
- ½ cup melted butter

Preheat oven to 350°F. Line a muffin pan with paper liners.

Whisk together flour, baking powder, baking soda, salt, and cinnamon (and nutmeg if using) in a medium bowl.

In a separate bowl, combine mashed bananas, granulated sugar, brown sugar, egg, vanilla, and melted butter.

Make a well in the flour mixture and add the wet ingredients. Mix just until moistened. (Do not overmix).
