- 4 x 250g trout, scaled, gutted, from sustainable sources
- Extra virgin olive oil
- 1 lemon
- 4 sprigs of thyme
- 4 bay leaves
- Sea salt
- Black pepper
Instructions

Preheat the oven to 200°C/400°F/gas mark 6.

Score the trout on both sides.

Rub the trout all over with olive oil, then season well with salt and pepper.

Stuff the cavities of the trout with slices of lemon, thyme and bay leaves.

Place the trout on a baking tray and bake for 15 minutes, or until cooked through.
