- 1/2 teaspoon salt, more to taste
- 1/4 teaspoon freshly ground black pepper, more to taste
- 2 medium apples, preferably Granny Smith or McIntosh
- 2 tablespoons cold unsalted butter, cut into small pieces
- 2 to 3 tablespoons brown sugar
